Summo Wagyu originates from the Hida region in central Japan, a place renowned for its clean air, pure water, and lush pastures—ideal for raising premium cattle. The history of Hida Wagyu dates back to the early 1980s, when the region began focusing on producing high-grade beef with exceptional marbling and flavour. Derived from the Kuroge Washu breed, also known as Japanese Black, Summo Wagyu is highly regarded for its superior marbling, tenderness, and rich taste. Only the highest quality Kuroge Washu cattle are selected, with a careful focus on maintaining pure bloodlines to ensure the finest product. These cattle are raised on a specialised diet that includes rice straw, corn, barley, and grains for minimum 900 days, allowing for optimal marbling development.
