Summo Wagyu: The Pinnacle of Japanese Beef from Hida Prefecture

Summo Wagyu originates from the Hida region in central Japan, a place renowned for its clean air, pure water, and lush pastures—ideal for raising premium cattle. The history of Hida Wagyu dates back to the early 1980s, when the region began focusing on producing high-grade beef with exceptional marbling and flavor. Derived from the Kuroge Washu breed, also known as Japanese Black, Summo Wagyu is highly regarded for its superior marbling, tenderness, and rich taste. Only the highest quality Kuroge Washu cattle are selected, with a careful focus on maintaining pure bloodlines to ensure the finest product. These cattle are raised on a specialized diet that includes rice straw, corn, barley, and grains, for about 30 months, allowing for optimal marbling development. Raised in a stress-free environment with regular health checks and clean living conditions, Summo Wagyu guarantees a premium, carefully nurtured product that reflects the pinnacle of Japanese beef excellence. 

 

Flanders Beef prides itself on producing high-quality beef croquettes by carefully selecting the finest ingredients and adhering to meticulous preparation standards. 

The beef is slowly cooked, typically braised or sautéed, to bring out its natural flavours and ensure a tender texture. Once cooked, the meat is finely minced or shredded and combined with ingredients like sautéed onions, fresh herbs, and a creamy béchamel sauce to create a rich and flavourful filling. The addition of subtle spices, such as nutmeg and black pepper, further enhances the taste, while the béchamel adds a smooth consistency that binds the filling together.

Each croquette is then carefully shaped into uniform portions, ensuring even cooking and consistent quality. The croquettes are coated in a light, crispy breadcrumb mixture. First, they are dusted with seasoned flour, then dipped in an egg wash, and finally rolled in fresh or panko breadcrumbs, creating a crunchy exterior that locks in the tender filling.
